    这道名为Tod Mun Pla的炸鱼饼是我们在当地餐厅里吃到的其中一味刷嘴小吃,虽说是炸物,但吃起来却只有鲜香不油腻,细看之下,才知道这造型圆扁、微辣的鱼饼里夹着长豆丁和泰国柠檬叶丝,怪不得这泰国鱼饼会让人吃得齿颊留香啊。

    Step 1

    取一大碗,倒入鱼浆,加入长豆、疯柑叶丝、鱼露、蛋黄及椰糖搅拌至均匀。Mixes fish paste with long bean, kaffir lime leaves, fish sauce, egg yolk and gula Melaka.

    Step 2

    将鱼浆分成2份,一份加入泰国红咖哩酱拌匀备用。Separate fish paste mixture into 2 portions, one of them mix with Thai chilli paste.

    Step 3

    手沾少许水,将鱼肉搓成球状,压扁成饼状。Mosit palm with some water, shape the fish paste mixture into small balls; and then flatten like biscuit.

    Step 4

    平底锅以中小火将油烧热,放入鱼饼煎至两面金黄色。Heat oil in pan, sear fish cake with medium low heat until both side golden brown.

    Step 5

    待凉后,伴着蘸酱一起享用即可。Let cool down and serve with dipping sauce.
